The preparation of turkey soup is similar to that of the traditional Chicken Soup. The popularity of the dish comes from the effective use of the leftovers of a turkey dinner. The dish is especially popular after Thanksgiving when leftovers are plentiful. What makes turkey an excellent candidate for soup is the often dry nature of aged turkey meat which limits its use in other dishes. The cooking of the meat in the soup tenderizes the turkey to create a delicious and flavorful meal. Some recipes even incorporate the use of stuffing, and even the turkey carcass in the preparation of the soup.
