How to Make Sweet Potato Pie

Ingredients

• 1 (1 pound) sweet potato
• 1/2 cup butter, softened
• 1 cup white sugar
• 1/2 cup milk
• 2 eggs
• 1 teaspoon vanilla extract
• 1/2 teaspoon ground nutmeg
• 1/2 teaspoon ground cinnamon
• 1 (9 inch) unbaked pie crust

Directions

Pre-heat your oven to 350 degrees. With skin on, boil the sweet potato for about 45 minutes or until done. Take the potato and run under cold water and then remove skin. Cut up the sweet potato into a bowl and add the butter. Mix with a mixer and then stir in milk, sugar, eggs, nutmeg, cinnamon, and vanilla. Beat all the ingredients on medium until the mixture is smooth. Pour the filling into the unbaked pie crust. Bake your pie for about 55 minutes. The pie will rise like a souffle and then will fall slightly while it cools. Allow to cool for at least 20 minutes.
