Sweet potato casseroles usually consist of sweet potatoes, pecans and marshmallows which are blended with eggs and vanilla, then baked in a casserole dish.

• Sweet potatoes, peeled, chopped and boiled fresh or canned
• Butter, melted
• Eggs
• Cinnamon, ground
• Nutmeg, ground
• Ginger, ground
• Miniature marshmallows
• Brown sugar

1. Preheat oven to 350 degrees.
2. Using an electric mixer, combine the sweet potatoes, butter, eggs, cinnamon, nutmeg and ginger.
3. Transfer the mixture to a greased baking pan or casserole dish.
4. Top with miniature marshmallows and brown sugar, then bake for 18-25 minutes or until lightly browned.
5. Cool briefly, serve and enjoy!
