Stuffed Eggplant is a recipe which involves removing the pulp of the eggplant and adding a combination of fillings such as cheese, meat, or vegetables.

The eggplant was once called the "Mad Apple" by doctors and botanists in Northern Europe in the 16th century because of its relation to poisonous plants of the Nightshade or Solanum family. It was believed to cause fevers, epileptic seizures and insanity. The eggplant was named Solanum insanum. But the Italians and the Spaniards already appreciated its culinary uses and called it the "Apple of Love" and the eggplant was eventually renamed Solanum melongena.
