Quiche

Quiche is a classic French dish made with eggs, milk and cream, cooked in a pastry crust, resembling an egg pie.

There are many variations to this dish, and any combinations of foods can be added. The basic quiche fillings are ham, onions and cheese.

Traditional quiches excludes cheese.

Quiche Lorraine

Quiche Lorraine is the most common of all quiches. In addition to the basic eggs and cream mixture, it also includes bacon or lardons (fatty bacon). Adding Gruyere cheese to this dish makes it quiche au gruyere or a quiche vosgienne. Adding onions to quiche Lorraine makes it quiche alsacienne.

History

Up until 1980 quiches were called flans in the United Kingdom.
