Oven Roasted Vegetables

Combining a variety of vegetables and roasting them in an oven is a healthy way to enjoy vegetables as a main course or side dish.

Ingredients

• Butternut squash, diced
• Zucchini, cubed
• Mushrooms, halved
• Bell peppers, seeded and chopped
• Sweet potato, peeled and cubed
• Potatoes, cubed
• Onion, sliced
• Thyme
• Rosemary
• Olive oil
• Salt and pepper

How to Make Oven Roasted Vegetables

1. Preheat oven to 475 degrees.
2. Mix the squash, zucchini, mushrooms, bell peppers, sweet potato, potato and onion in a large bowl.
3. Combine the thyme, rosemary and olive oil in a small bowl.
4. Drizzle the oil mixture over the vegetables and mix until well combined. Season with salt and pepper to taste.
5. Transfer the vegetable mixture to a large roasting pan.
6. Bake for 35 to 45 minutes, tossing occasionally, until the vegetables are tender and lightly browned.
7. Serve and enjoy!
