Gluten, a protein compound found in high concentrations in wheat, is a hidden component of diets throughout the world. It can also be a common cause of allergic reactions in otherwise healthy people. For those who are allergic, gluten free recipes contain little or no gluten. Bread can be made successfully without wheat flour.

The following ingredients can be used as alternatives to wheat flour.

• Rice: Rice flour can be used for many of the same applications as wheat flour, though the result is usually a different consistency. Rice bread tends to have a moist, heavy quality.

• Quinoa: A South American grain used in pasta, bread and other baked goods.

• Amaranth: This leafy vegetable contains seeds that can be made into a gluten free flour.

• Barley: Barley does contain gluten, but only in small amounts compared to wheat. Bread made with mostly barley flour may be acceptable for those whose gluten sensitivity is not acute.
