Colcannon is an Irish and Scottish dish consisting of mashed potatoes, cabbage or kale, butter, salt, and pepper. Other ingredients can be added such as milk, cream, leeks, onions, chives, garlic, boiled ham or Irish bacon.

Variations

Colcannon, which is usually meatless, is a traditional food for fasting during the 40-day Christian observance of Lent. Versions made during Lent are usually austere, the only note of indulgence being a small amount of butter. However, non-Lenten versions may include a half-cup of cream (called Kilkenny Colcannon) or sharp cheddar cheese (a variation called Rumbledethumps). ¹
