History

Nicola Federico, born in 1891, was an accomplished chef who invented the cannelloni in 1907, while working at the La Favorita restaurant in Sorrento, Italy. The pasta was originally named strascinati, but then became known as cannelloni.

Cannelloni become a staple in Italian kitchens worldwide. There are hundreds of recipes and countless variation that call for cannelloni including vegetarian recipes.
